Sambucus nigra (black elderberry) has been used in European traditional medicine for centuries. The dried berries are rich in anthocyanins, flavonoids (including quercetin and rutin), vitamin C, and phenolic acids. Their deep dark colour and intensely aromatic, fruity character make them one of the most distinctive berries for infusions, syrups, and traditional seasonal preparations.
Important: Raw elderberries contain sambunigrin, which can cause stomach discomfort. Always use with heat — simmer or brew before consuming. Do not eat raw.
Flavour profile: Deep, richly aromatic, and berry-forward with a pleasantly tart, slightly earthy finish. The brew turns a vivid dark ruby. Pairs beautifully with honey, ginger, cinnamon, clove, and lemon.
How to use:
- Elderberry tea — gently simmer 1 tablespoon per 250ml water for 10–15 minutes, then strain. Sweeten with honey after straining.
- Elderberry syrup — simmer berries with water and spices (ginger, clove, cinnamon), strain, and add honey once cooled. A traditional immune-season staple.
- Mulled drinks — add to warmed wine or juice while heating to deepen aroma and fruity notes.
- Infused vinegar or kombucha — adds colour, flavour, and depth to fermented preparations.
