Dried Lion's Mane (Hericium erinaceus) — wild-foraged and cultivated from the Carpathian Mountains of Ukraine. Low-temperature dried at 40–50°C to preserve natural structure, colour, and composition. 100% fruiting body — no mycelium on grain, no fillers, no additives.
Hericium erinaceus is one of the most distinctive fungi in European and Asian woodlands, instantly recognisable by its cascading white spines that give it the appearance of a lion's mane or a white pom-pom. It grows on hardwood trees and logs, typically in late summer and autumn. The fruiting body has a mild, delicate flavour — often compared to seafood — making it one of the few truly culinary functional mushrooms.

Culinary use: Dried Lion's Mane rehydrates beautifully. Soak in warm water for 15–20 minutes, then squeeze gently and slice. Sauté in butter or oil — it develops a golden, slightly meaty texture. Excellent in stir-fries, pasta, risotto, soups, and as a meat substitute in sandwiches or tacos.
As a tea: Simmer 5–10g of dried Lion's Mane in water for 20 minutes. The resulting tea is mild and slightly sweet with a clean, forest character.
Storage: Keep sealed in a cool, dry place away from humidity and direct sunlight. Shelf-stable for up to 12 months when stored correctly.
